Don’t pierce the meat.  Making holes in the meat will only allow the juices to escape during the cooking process. Just take your time and let the meat cook properly.

Wait on the sauces: wait until the final five to 10 minutes of cooking to apply the glazes and sauces to your meat. Do it sooner will only cause it to blackening because of the sugar in the sauce.
